Hủ Tiếu Chay - 'Oil + Water' reduction

Beneath the tiered, dragon-eaved roofline of Chùa Giác Nguyên, a hủ tiếu chay stand has set up shop for the evening — plastic stools in red and blue, a hand-painted "NƯỚC" sign for drinks, motorbikes parked in against the wall. Above it all, the pagoda's flags hang side by side: the five-coloured Buddhist flag and the Vietnamese flag, gold star lit up against a fading pink sky.

It's the same quiet pattern you find all over this city — the best vegetarian food sold right at the temple gate, plastic tables spilling onto the pavement long after the monks have gone in for the evening. This is the corner at the top of the alleyway market near our gallery, one I walk past most days, and it felt like exactly the kind of everyday scene worth cutting into wood.
